I spent an more hour looking for the Connection option in TorBrowser 14.5.5 in Whonix.Workstation 17, but couldn’t find it.
In regular Debian 12 in TorBrowser 14.5.5, this option is available.
Why is this important option missing in Whonix.Workstation? This prevents the use of bridges in TorBrowser.

Sorry, but I have another question about bridges.
I use CLI Gateway. I have now read this footnote:
Anon Connection Wizard is a graphical user interface (GUI) application. It does not have command line interface (CLI) support yet. It is therefore unavailable on Whonix-Gateway CLI. Use setup-dist
instead; note that functionality is limited and does not support Bridges.
Did I understand correctly that it is impossible to configure and use nodes in CLI Gateway?
I believe it should be possible by configuring them manually. See the manual bridge configuration docs.
