Bullseye: live-boot needs GRUB_DISABLE_LINUX_UUID="true" parameter in /etc/grub.d/11_linux_live - #6 by Patrick is a general bug breaking this way earlier but solution avaialble.
This could be a KVM specific issue?

Or could be simply too less host RAM. But even then, above might help.
