I’d be OK with just my computers going through this router, but all traffic would be ideal. Any suggestions?

In other words, simply words: just putting a random device (mobile phone, Windows computer that has been used for non-anonymous activity) behind a Tor [Whonix-Gateway or any] alone won’t anonymize. It may be fine for circumvention, but not anonymization. This is because for example cookies linked to your real identity would leak your identity, even if you appear as using a Tor IP. And more. Therefore not using Whonix-Workstation is recommended against.
